Cranberry Salsa Anyone?

Cranberry sauce was always a favorite of mine during the holidays. But I've never really found a whole lot of use for fresh cranberries. So this really caught my eye! I bet cranberry salsa can dress up a variety of otherwise boring dishes. Here are some quesadillas that make use of a spicy cranberry salsa.

Tropical Mango Salad and Creamy Pineapple Dressing

If you love the light fruity flavors of mango, banana and pineapple then you can't go wrong with this salad. Don't you love it when something just happens to come together perfectly? The author of this recipe had that happen when she threw some ingredients together to create a complimenting dressing for the salad that she also thickened with chia seeds (nice!).
