As we entered the grocery store yesterday, I noticed two large carts filled with some pretty hefty sized pumpkins (hard not to when they were almost blocking the main aisle leading to the produce section)... Wow, that time of year already! So with that in mind, I hit Google when we got home in a search for some new pumpkin recipes that haven't been done a million times. The first one I want to share with is a pumpkin trail mix that you can make and throw in the freezer for quick, healthy, sinful snacks later. Surprisingly, they hold that delicate creaminess too! The actual recipe calls for oats, but you could sub in quiona or unsweetened shredded coconut if you want to. Head over to Daily Bites to get the dish :)
